Ingredients
Eggs – 4
Coconut milk – 1 cup
Onion – 1, chopped
Tomato – 1, chopped
Ginger-garlic paste – 1 tsp
Curry leaves – few
Mustard seeds – ½ tsp
Turmeric, red chilli, garam masala
Salt, oil
Directions
- Heat oil; crackle mustard & curry leaves.
- Sauté onion; add ginger-garlic & tomato.
- Add spices; cook until a paste forms.
- Pour coconut milk & simmer.
- Crack eggs into curry, cover & cook until set.
