A light, tangy, and refreshing soup with the flavours of lemon and coriander – perfect as a healthy starter.

Ingredients

  • 1 tbsp oil

  • 1 tsp garlic, finely chopped

  • 1 small onion, finely chopped

  • 1 small carrot, finely chopped

  • ¼ cup cabbage, shredded

  • 4 cups vegetable stock

  • 2 tbsp fresh coriander leaves, chopped

  • 2 tbsp lemon juice

  • 1 green chilli, slit

  • Salt & pepper to taste

Directions

  • Heat oil in a pot, sauté garlic and onion until translucent.
  • Add carrot and cabbage, stir-fry for 2 minutes.
  • Pour in vegetable stock, bring to a boil.
  • Add coriander, chilli, salt, and pepper. Simmer 10 minutes.
  • Turn off the heat, stir in lemon juice.
  • Serve hot with extra coriander garnish.
