A creamy and fragrant Indian rice pudding enriched with saffron, cardamom, and dry fruits — served warm or chilled.

Ingredients

  • 1 litre full-cream milk

  • ¼ cup basmati rice (washed & soaked for 30 min)

  • ½ cup sugar

  • ¼ cup chopped cashews, almonds, and pistachios

  • 1 tsp cardamom powder

  • A few saffron strands soaked in warm milk

Directions

  • Boil milk in a heavy-bottomed pan.
  • Add soaked rice and cook on low flame, stirring occasionally, until rice is soft.
  • Add sugar and mix well.
  • Stir in saffron milk, cardamom powder, and dry fruits.
  • Cook for another 10 minutes until thick and creamy.
  • Serve warm or chilled.
