Ingredients
- For Dough:
2 cups all-purpose flour (maida)
4 tbsp oil or ghee
1/2 tsp carom seeds (ajwain)
Salt to taste
Water (as needed)
- For Filling:
3 medium potatoes (boiled & mashed)
1/2 cup green peas
1 tsp cumin seeds
1 tsp grated ginger
1–2 green chillies (finely chopped)
1/2 tsp garam masala
1/2 tsp amchur (dry mango powder)
1/2 tsp red chilli powder
Salt to taste
Oil for frying
Directions
- Mix flour, ajwain, salt, and oil. Add water and knead into a firm dough. Rest 20 mins.
- Heat oil, add cumin, ginger, chillies, then mashed potatoes and peas.
- Add spices and cook until the mixture is dry. Cool completely.
- Divide the dough, roll it into an oval, cut it in half, and shape cones.
- Fill cones with potato mixture, seal edges with water.
- Deep-fry samosas on medium heat until golden and crisp.
