Golden, crispy Aloo Samosas stuffed with spiced potato filling. A beloved Indian snack perfect for tea time or festive gatherings.

Ingredients

  • For Dough:
  • 2 cups all-purpose flour (maida)

  • 4 tbsp oil or ghee

  • 1/2 tsp carom seeds (ajwain)

  • Salt to taste

  • Water (as needed)

  • For Filling:
  • 3 medium potatoes (boiled & mashed)

  • 1/2 cup green peas

  • 1 tsp cumin seeds

  • 1 tsp grated ginger

  • 1–2 green chillies (finely chopped)

  • 1/2 tsp garam masala

  • 1/2 tsp amchur (dry mango powder)

  • 1/2 tsp red chilli powder

  • Salt to taste

  • Oil for frying

Directions

  • Mix flour, ajwain, salt, and oil. Add water and knead into a firm dough. Rest 20 mins.
  • Heat oil, add cumin, ginger, chillies, then mashed potatoes and peas.
  • Add spices and cook until the mixture is dry. Cool completely.
  • Divide the dough, roll it into an oval, cut it in half, and shape cones.
  • Fill cones with potato mixture, seal edges with water.
  • Deep-fry samosas on medium heat until golden and crisp.
