Ingredients
2 cups basmati rice (soaked 30 min)
2 tbsp ghee + 1 tbsp oil
1 large onion (sliced thin)
2 tomatoes (chopped)
3 green chillies (slit)
1/2 cup yoghurt
2 tbsp biryani masala
Assorted vegetables: potatoes, carrots, beans, peas, cauliflower (~2.5 cups total)
Whole spices: cinnamon, 3 cardamoms, 4 cloves, 1 star anise, bay leaf
10 cashews, 1 tbsp raisins (optional)
Few strands of saffron soaked in 2 tbsp warm milk
Chopped mint & coriander
Salt to taste
Directions
- Parboil rice with whole spices. Drain and set aside.
- In a heavy pot, fry onions until golden.
- Add chillies, ginger-garlic paste, and tomatoes. Cook till soft.
- Add yoghurt, spices, and veggies. Cook till veggies are 80% cooked.
- Layer rice over the veggies. Add saffron milk, mint, coriander, and fried nuts.
- Seal and cook 12 mins on low. Rest 5 mins, then gently fluff.
