Aromatic Dum Veg Biryani made with basmati rice, fresh veggies, and warm spices—a perfect one-pot Indian delight for festive meals or family dinners.

Ingredients

  • 2 cups basmati rice (soaked 30 min)

  • 2 tbsp ghee + 1 tbsp oil

  • 1 large onion (sliced thin)

  • 2 tomatoes (chopped)

  • 3 green chillies (slit)

  • 1/2 cup yoghurt

  • 2 tbsp biryani masala

  • Assorted vegetables: potatoes, carrots, beans, peas, cauliflower (~2.5 cups total)

  • Whole spices: cinnamon, 3 cardamoms, 4 cloves, 1 star anise, bay leaf

  • 10 cashews, 1 tbsp raisins (optional)

  • Few strands of saffron soaked in 2 tbsp warm milk

  • Chopped mint & coriander

  • Salt to taste

Directions

  • Parboil rice with whole spices. Drain and set aside.
  • In a heavy pot, fry onions until golden.
  • Add chillies, ginger-garlic paste, and tomatoes. Cook till soft.
  • Add yoghurt, spices, and veggies. Cook till veggies are 80% cooked.
  • Layer rice over the veggies. Add saffron milk, mint, coriander, and fried nuts.
  • Seal and cook 12 mins on low. Rest 5 mins, then gently fluff.
