A zesty vegan sauté made with sweet corn, protein-rich beans, and a tangy lime-chilli finish—perfect as a light meal or filling.

Ingredients

  • 1 cup sweet corn (boiled)

  • ¾ cup kidney beans or black beans (boiled)

  • 1 tsp olive oil

  • 1 tsp garlic (minced)

  • ½ tsp chilli flakes

  • ¼ tsp cumin powder

  • Salt to taste

  • Juice of ½ lime

  • Fresh coriander (for garnish)

Directions

  • Heat Oil: Heat oil in a pan. Add garlic and chili flakes; sauté briefly.
  • Add Corn & Beans: Toss in corn, beans, cumin, and salt. Stir-fry for 4–5 minutes.
  • Finish: Turn off heat and add lime juice.
  • Serve: Garnish with coriander and enjoy warm.
