A smoky, spiced vegan filling made with tandoori-style tofu and crunchy vegetables—perfect for wraps, bowls, or salads.

Ingredients

  • 200 g firm tofu (cubed)

  • ½ cup capsicum (sliced)

  • ½ cup onion (sliced)

  • 1 tsp oil

  • 1½ tbsp vegan yogurt or cashew paste

  • ½ tsp red chili powder

  • ½ tsp garam masala

  • ¼ tsp turmeric powder

  • ½ tsp cumin powder

  • Salt to taste

  • Lemon juice (for finishing)

Directions

  • Marinate Tofu: Mix vegan yogurt, spices, and salt. Toss tofu and rest 10 minutes.
  • Sauté Veggies: Heat oil in a pan. Add onion and capsicum; cook till slightly crisp.
  • Cook Tofu: Add marinated tofu and stir-fry till golden and smoky.
  • Finish: Add lemon juice and mix well.
