1 medium sweet potato (cubed)
¾ cup boiled black beans
1 tsp olive oil
½ tsp smoked paprika
¼ tsp cumin powder
¼ tsp garlic powder
Salt to taste
½ onion (sliced)
½ cup cherry tomatoes (halved)
Fresh coriander or parsley (for garnish)
Directions
- Roast Sweet Potato: Toss sweet potato with half the oil, salt, and paprika. Roast or pan-cook until soft and golden.
- Sauté Veggies: In a pan, heat remaining oil. Add onion and cook until soft.
- Add Beans & Spices: Add black beans, cumin, and garlic powder. Toss well.
- Combine: Add roasted sweet potato and cherry tomatoes. Mix gently.
- Serve: Garnish with herbs and serve warm.
