A protein-rich vegan skillet made with tender chickpeas, fresh spinach, and warm spices—perfect for a quick, healthy meal.

Ingredients

  • 1 cup boiled chickpeas

  • 1½ cups fresh spinach (roughly chopped)

  • 1 tsp olive oil

  • ½ tsp cumin seeds

  • 1 small onion (finely chopped)

  • 1 tsp garlic (minced)

  • ¼ tsp turmeric powder

  • ½ tsp paprika or red chilli powder

  • ¼ tsp garam masala

  • Salt to taste

  • Lemon juice (for finishing)

Directions

  • Heat Oil: Heat oil in a pan. Add cumin seeds and let them splutter.
  • Sauté Base: Add onion and garlic. Cook until soft and golden.
  • Spice It: Add turmeric, chilli powder, and garam masala. Mix well.
  • Add Chickpeas: Stir in chickpeas and cook for 3–4 minutes.
  • Finish with Spinach: Add spinach and cook until just wilted.
  • Serve: Finish with lemon juice and serve hot.
