A refreshing vegan stir-fry made with shredded cabbage, coconut, and lime, bursting with tropical flavor and perfect for a light meal.

Ingredients

  • 2 cups cabbage (finely shredded)

  • 2 tbsp fresh coconut (grated)

  • 1 tsp coconut oil

  • ½ tsp mustard seeds

  • 1 green chilli (finely chopped)

  • 6–8 curry leaves

  • ¼ tsp turmeric powder

  • Salt to taste

  • Juice of ½ lime

Directions

  • Tempering: Heat coconut oil in a pan. Add mustard seeds, curry leaves, and green chilli.
  • Add Cabbage: Add shredded cabbage, turmeric, and salt. Stir well.
  • Cook: Cover and cook for 5–6 minutes on low flame.
  • Finish: Add grated coconut and lime juice. Mix well.
  • Serve: Serve warm with chapati or as a side with rice.
